Shahi Tukra | Royal Toast

A Popular and simple Maharashtrian recipe is "Phodnicha Bhaat". If you have some leftover rice, here is an easy way to turn your leftover rice into delicious one dish meal. Whenever I end up with leftover rice I prepare this delicious dish. Sometimes I make extra rice, so the next day I can take it in lunch box. It can be served as breakfast, brunch, lunch or dinner. This phodnicha bhaat tastes good with plain yogurt or pickle.

Preparation Time: 10 min || Cooking Time: 30 min || Serves: 4 people

Shahi Tukda Ingredients:

  • Bread Slices - 8
  • Milk – 1 litre
  • Cardamom Powder – 1 teaspoon
  • Sugar – 1 cup (for sugar syrup)
  • Sugar – 1 cup (for Rabri)
  • Water – 1/2 cup
  • Saffron strings
  • Pistachios chopped – 7
  • Almonds Chopped – 5
  • Cashew nuts chopped - 5
  • Oil/ghee for frying

How to prepare Shahi Tukda:

  •  Prepare sugar syrup by boiling 1 cup sugar in 1/2 cup water, let it cook till it reaches 2 thread consistency. Add cardamom powder and few strings of saffron to it while it is boiling. Keep aside.
  • Cut the corners of bread slices and cut it diagonally or triangle shape. Heat the ghee and when it is hot, deep fry the bread slices till golden brown. Remove on a tissue lined plate.
  • Boil milk in a heavy bottom pan. Simmer and reduce to half.
  • Add Sugar and boil for another 10 mins.
  • Dip fried bread slices in sugar syrup for 5 seconds. Keep them on the serving plate.
  • Pour the prepared milk over the bread.
  • Garnish with chopped dry fruits.
  • Serve immediately.
