Eggless Banana Cinnamon Muffins Recipe

Finally, I was able to take out time from being a full-time mom to make some muffin's. The last time I had made this was at 3:00 am in morning when my kid was 7 months old and had very odd sleep cycle and he would sleep at 5:00 am (yes yes in morning). So, after 1.5 years I tried my hands in making muffin and this will be the first time my kid will be eating muffins.

The best thing about making a banana cinnamon muffin in winter is the warmness that spreads in the house along with Cinnamon's scent which stirs the appetite, rejuvenate and warms the senses.

The sad part of making a banana cinnamon muffin is that you must wait for 6-7 hours for it to cool down before you can have one. When muffin is baked (after removing from the microwave/oven) the crust is hard and you must wait for 6-7 hours for the crust to soften and in that time the cinnamon flavor gets enhanced and the Muffin will gets infused with subtle cinnamon flavor. The banana makes the muffin moist and it just melts into your mouth.

Eggless Banana Cinnamon Muffins Ingredients:

  • All purpose flour – 1 cups
  • Baking powder – 1/2 tsp
  • Baking soda – 1/2 tsp
  • Sugar – 1/2 cup, powdered
  • Cinnamon powder – 1/2 tsp
  • Bananas, very ripe – 2
  • Yogurt (curd) – 1/4 cup
  • Vegetable oil – 1/4 cup
  • Vanilla extract – 1/2 tsp
  • Salt – 1/4 tsp

How to prepare Eggless Banana Cinnamon Muffins:

  • Sieve together flour, baking powder, baking soda, salt and cinnamon powder in a mixing bowl.
  • Pre-heat the oven to 180 C / 350 F.
  • Roughly mash the banana with your fingers or with a fork and keep aside.
  • Combine mashed bananas, sugar, oil, yogurt in a large bowl. Blend until mixture become smooth
  • Add the flour to mixture in 3 batches while mixing with a spatula.
  • Do not over beat it but just mix till you do not see any flour patches.
  • Line the muffin tray with paper liners and spoon the batter in it up to 3/4th of it
  • Bake for 30 minutes or until the toothpick inserted comes out clean and top turns golden brown.
  • Take the tray out and let it come to room temperature.
  • Eggless Banana Cinnamon Muffin are ready.

My baby boy was waiting patiently in the kitchen for the microwave to beep and me to take out the cake (anything spongy, brown and eatable is cake for him). But poor fellow didn’t know that his mom has again started blogging and anything can only be eaten once its pictures have been taken.
