A Popular and simple Maharashtrian recipe is "Phodnicha Bhaat". If you have some leftover rice, here is an easy way to turn your leftover rice into delicious one dish meal. Whenever I end up with leftover rice I prepare this delicious dish. Sometimes I make extra rice, so the next day I can take it in lunch box. It can be served as breakfast, brunch, lunch or dinner. This phodnicha bhaat tastes good with plain yogurt or pickle.

Soaking Time: 5 hrs || Preparation Time: 20 min || Cooking Time: 20 min || Serves:10-20 Dahi Vada

Daha Vada || Dahi Bhalla Ingredients:

  • 3 cups Cooked Rice (left over rice)
  • 1 Onion, finely chopped
  • 1 small tomato, finely chopped
  • 2-3 tbsp Groundnuts
  • 2 tsp cashew nuts (optional)
  • 5-6 Green chilies, finely chopped
  • 2 tbsp chopped Coriander
  • A sprig of Curry leaves
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Mustard seeds
  • 1/4 tsp cumin seeds
  • 1/4 tsp Hing
  • Salt to taste
  • 2 tbsp Oil
  • Salt to taste

How to prepare Daha Vada || Dahi Bhalla:

  • Heat oil in a pan. Add ground nuts, mustard seeds and cumin seeds, allow to splutter.
  • Then add curry leaves, chopped green chilies, hing and turmeric powder.
  • ¬†Then add chopped onions.Saute the onions till they turn translucent.
  • Then add the leftover rice and salt. Mix well. Stir gently without mashing the rice. Cover the pan for a min.
  • Garnish with chopped coriander. Serve hot.
