Gajar ka halwa is the traditional sweet dish in all Bollywood movies where all heroes favorite dish is maa ke haath ka gajar ka halwa. I still have no idea how they can make Gajar ka halwa taste same all year round.

Winter is incomplete without gajar ka halwa. In winter carrots are moist, sweet, long, red and these carrots will give best taste to your gajar ka halwa (Carrot pudding in english). Winter is almost about to end and what better way to end it with by making Maa ke style ka gajar ka halwa (Carrot pudding the way my mom used to make).

Gajar ka halwa  also known as gajorer halwa, is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrot in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are first sauted in ghee, a South Asian clarified butter.

The dessert is traditionally eaten during all of the festivals in India, mainly on the occasion of Diwali, Holi, Eid al-Fitr and Raksha Bandhan. It is served hot during the winter.

But like I said I will be sharing "Maa ke style ka gajar ka halwa" which means I will be making it in traditional method jisko khake maa kya nani bhi yaad aajaegi and you will remenber your childhood days ;). Make this dish in traditional way and give it to your children so they will always like only "maa ke haath ka gajar ka halwa"

Preparation Time: 15 min || Cooking Time: 30 min || Serves: 3 people

Carrot Halwa Ingredients:

  • Thickly grated carrot - 2 cups
  • ghee – 1 tbsp
  • Sugar – 1/4 tbsp
  • Milk – 1 cup
  • Water - ½ cup
  • Cardamom (elaichi) powder – 1/2 tsp
  • Mixed chopped dry fruits (I used almonds & cashews) - 1 tbsp

How to make Carrot Halwa:

  • Wash and trim both the ends of the carrots. Lightly scrape the outer skin using a peeler and grate carrots Thickly. (use the Big hole for grating)
  • Heat 1 tbsp of ghee and fry the nuts on low until light golden.
  • Add the grated carrots and mix well. sauté them for 8-10 minutes. (until raw smell goes off)
  • Add milk and water and mix well; Continue to stir till the milk gets absorbed and the mixture has thickened (takes around 15-20 minutes).
  • When the mixture is almost dry, add the sugar and keep on stirring. (5-7 minutes)
  • Now add powdered cardamom and mix well. When the halwa is thick and starts leaving the sides of pan, switch off the flame.
  • Enjoy the warm gajar halwa or you can serve warm gajar halwa with vanilla Ice cream. It is a great party dessert.
